What are Latkes?

Recipe for Latkes

Ingredients:

  • 2 pounds of russet potatoes
  • 1 medium onion
  • 2 large eggs, lightly beaten
  • 3 tablespoons of all-purpose flour
  • 1 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • Vegetable oil for frying

Instructions:

  1. Peel the potatoes and grate them using a box grater or food processor. Place the grated potatoes in a colander and press out any excess moisture with a paper towel.
  2. Peel the onion and grate it using the same method as the potatoes. Mix the grated onion with the potatoes.
  3. In a large mixing bowl, whisk the eggs, flour, salt, and pepper until well combined. Add the grated potatoes and onion to the egg mixture and stir until everything is well combined.
  4. Heat a large skillet over medium-high heat and add enough vegetable oil to coat the bottom of the pan. Once the oil is hot, use a spoon to drop small mounds of the potato mixture into the pan, flattening them slightly with the back of the spoon.
  5. Cook the latkes until they are golden brown and crispy on both sides, about 3-4 minutes per side. Remove the latkes from the pan and place them on a paper towel-lined plate to drain off any excess oil.
  6. Repeat with the remaining potato mixture, adding more oil to the pan as needed.
  7. Serve the latkes hot with sour cream, applesauce, or your favorite toppings.
